Quiche Lorraine

Preheat oven to 190°C / 375°F. Blind bake pie crust with parchment and weights for 15 minutes. Remove weights and bake 5 more minutes.

Cook bacon until crisp. Drain and chop into pieces.

Whisk together eggs, cream, milk, salt, pepper, and nutmeg until smooth.

Scatter bacon and grated Gruyère evenly across the par-baked crust.

Carefully pour in the custard mixture.

Bake for 35–40 minutes until the top is golden and the center jiggles only slightly.

Let cool 15 minutes before slicing — the custard continues to set as it rests.
