Perfect Egg Fried Rice
Restaurant-style fried rice with wok hei flavor — the secret is day-old rice and screaming hot oil.

Let's make it.

Break up cold rice with your hands so every grain is separate.

Beat eggs with a pinch of salt.

Heat wok over the highest heat until smoking. Add 2 tbsp oil, swirl to coat.

Pour in beaten eggs. Let set for 5 seconds, then scramble into large, fluffy curds. Remove and set aside.

Add remaining oil. Toss in rice and press flat against the wok. Let it sear without moving for 30 seconds, then toss. Repeat 3–4 times.

Add soy sauce around the rim of the wok (it'll sizzle and caramelize). Toss to coat.

Return the eggs, add sliced scallions and white pepper. Toss together, drizzle sesame oil, and serve immediately.
