Chocolate Ganache Cake
Deep chocolate, a tender crumb, and a glossy ganache finish. A little slice of something extraordinary.

Let's make it.

Heat the oven to 180°C. Grease and line a 20 cm round cake tin.

Beat the butter and sugar until pale and fluffy. Beat in the eggs one at a time.

Sift the flour, cocoa, and baking powder together. Fold into the butter mixture, alternating with the milk, until the batter is smooth.

Spoon into the tin and level the top. Bake for 30 minutes, or until a skewer inserted into the center comes out clean. Cool completely.

Chop the dark chocolate into a heatproof bowl. Warm the cream until just steaming, pour over the chocolate, and leave for 2 minutes. Stir slowly until glossy.

Let the ganache thicken slightly, then spread over the cooled cake. Leave to set before slicing. A little whipped cream on the side is lovely.
